Buffalo chicken flatbreads with a lighter ranch drizzle

Shredded chicken tossed in buffalo hot sauce and piled onto a wholemeal wrap crisped up like a flatbread base, finished with a drizzle made from reduced-fat cream cheese and low-fat Greek yoghurt instead of a bottled ranch. Spicy, cheesy and genuinely crisp at the edges, with a good hit of protein in every piece.

Ingredients

  • 560 gchicken breast
  • 4wholemeal wraps
  • 60 mlbuffalo-style hot sauce
  • 120 greduced-fat grated tasty cheese
  • 60 greduced-fat cream cheese
  • 60 glow-fat greek yoghurt
  • 10 gcrushed garlic
  • 2spring onions, sliced
  • 10 mlolive oil

Method

  1. Heat the oven to 220°C fan bake.

  2. Heat half the olive oil in a frying pan and cook the chicken breast for 6 to 7 minutes a side until cooked through, then rest it for a few minutes and shred it with two forks.

  3. Toss the shredded chicken through the buffalo hot sauce until every piece is coated.

  4. Brush the wraps lightly with the remaining olive oil and bake them alone on a tray for 4 minutes so they start to crisp before anything goes on top.

  5. Scatter the buffalo chicken and reduced-fat tasty cheese over each wrap and bake for a further 8 to 10 minutes until the cheese has melted and the edges are crisp.

  6. While that bakes, stir the reduced-fat cream cheese, low-fat Greek yoghurt and garlic together into a smooth drizzle.

  7. Cut each flatbread into wedges and finish with the drizzle and the spring onion.

Bake the wrap alone before it's topped

Giving the wrap those first 4 minutes in a hot oven on its own is what turns it from a soft tortilla into something that holds up like a flatbread base. Piling on wet toppings before it's had that head start leaves the centre soggy.

Storage

Best eaten fresh, since the wrap softens once it sits.

Keeps two days in the fridge if you must, but reheat in a hot oven rather than the microwave to bring some crispness back.
